SMASHED POTATO BITES RECIPE

How to prepare a smashed potato bites for breakfast in Nairobi

Ingredients
  

  • 4 –6 Medium potatoes pre-boiled until soft
  • 2 Tablespoons of Cooking oil
  • ½ cup Shredded cheddar cheese
  • ½ tsp Salt
  • Oregano / Garlic powder

Equipment

  • a paper towel
  • a flat plate
  • chopping board
  • frying pan
  • a spatula
  • a lid

Method
 

  1. Start by patting the boiled potatoes dry with a paper towel.
  2. Place a potatoes on a flat plate or chopping board and use a cup to press down firmly until the potato is flat like a thick pancake.
  3. Heat your oil in a large frying pan over medium heat.
  4. Place the flattened potatoes into the hot oil carefully and fry for 4–5 minutes without moving them so they develop a golden crust.
  5. Using a spatula, flip each potato.
  6. Spread the shredded cheese onto the cooked side of each potato while the bottom side finishes frying.
  7. Cover the pan with a lid for 1–2 minutes.
  8. Remove the potatoes from the pan once cooked and sprinkle with salt.
