- Start by patting the boiled potatoes dry with a paper towel.
- Place a potatoes on a flat plate or chopping board and use a cup to press down firmly until the potato is flat like a thick pancake.
- Heat your oil in a large frying pan over medium heat.
- Place the flattened potatoes into the hot oil carefully and fry for 4–5 minutes without moving them so they develop a golden crust.
- Using a spatula, flip each potato.
- Spread the shredded cheese onto the cooked side of each potato while the bottom side finishes frying.
- Cover the pan with a lid for 1–2 minutes.
- Remove the potatoes from the pan once cooked and sprinkle with salt.
