Yam and Eggs Breakfast Recipe

Ingredients
  

  • 1 medium-sized yam
  • 3 eggs
  • 2 tbsp Cooking oil
  • 1 small onion (chopped)
  • 1 small tomato (chopped)
  • 1 tbsp Salt
  • 1 tbsp Black pepper or chili

Equipment

  • frying pan
  • chopping board
  • bowl
  • fork
  • knife

Method
 

  1. Peel and wash the yam thoroughly
  2. Using a chopping board, Cut it into small cubes.
  3. Boil the yam in salted water for about 8–12 minutes until justtender,drain it and set aside.
  4. Crack the eggs into a bowl, and add a little salt and pepper, and beatwell with a fork
  5. Heat the cooking oil in a frying pan over medium heat.
  6. Add chopped onions (and tomatoes if using) and fry for 1–2 minutes.
  7. Add the boiled yam cubes and lightly fry for a few minutes untilslightly golden brown
  8. Pour in the beaten eggs over the yam.
  9. Stir gently and cook until the eggs are set and mixed through.
  10. Taste and adjust salt/spice, then serve hot.
