Peel and wash the yam thoroughly
Using a chopping board, Cut it into small cubes.
Boil the yam in salted water for about 8–12 minutes until justtender,drain it and set aside.
Crack the eggs into a bowl, and add a little salt and pepper, and beatwell with a fork
Heat the cooking oil in a frying pan over medium heat.
Add chopped onions (and tomatoes if using) and fry for 1–2 minutes.
Add the boiled yam cubes and lightly fry for a few minutes untilslightly golden brown
Pour in the beaten eggs over the yam.
Stir gently and cook until the eggs are set and mixed through.
Taste and adjust salt/spice, then serve hot.
