Method
- Mash bananas into a bowl until they are smooth.
- Break the eggs and beat them with a fork.
- Sieve the flour, salt and baking powder in a bowl.
- Add in sugar to the mixture and mix well.
- Fold in bananas with dry ingredients .
- Make a well at the center of the flour.
- Add in beaten egg and some milk, mix to a thick batter and beat well
- Continue beating and adding in milk until dropping consistency is formed.
- Heat a little oil in a frying pan .
- Drop in mixture in spoonfuls from the end of a metal spoon to form neatrounds.
- Cook till bubbles start to form on upper side and underside is golden brown
- Cook second side till golden brown
- When cool serve pancakes in a stack with slices of bananas
