Method
- Beat the eggs in a bowl add milk salt and black pepper and stir
- Remove seeds from peppers and dice peppers into small cubes
- Dice onions into small cubes
- Add in onions and peppers to egg mixture
- Heat oil in a nonstick pan on medium heat
- Pour egg mixture into the pan and twirl the skillet to evenly cover the bottom
- Cook egg for 1 minute until eggs start to set
- Lift edges with a spatula and tilt skillet so that the uncooked eggs runs towards the bottom to set
- Carefully flip the omelette and cook for 30 seconds to 1 minute
- Fold the omelette and serve garnished with chives
